5 Simple Summer Salads

A Simple Summer Salad recipe is always great to have up your sleeve, be it when you need a speedy working from home lunch or something special for a quick family dinner. Here are 5 of my go-to recipes that I know will be absolutely delicious each time they’re thrown together. Make swaps wherever you need to and use up what you’ve already got at home first instead of buying more; I bet you’ll be surprised what will be a great flavour combo!


Lovely Lentil Salad with Sumac Dressing
This lentil salad with a delicious sumac dressing is a winner with everyone! If you haven’t been swayed with lentils just yet, maybe you will after this. A great hearty salad for a sunny weekend and great to take on a picnic too. Get the recipe.

Broccoli & Halloumi Salad
This Broccoli & Halloumi Salad with Lentils & a Herby Dressing to drizzle over is a firm favourite of mine. I love it year round but you could also swap the broccoli for Asparagus when it’s in season and when Sprouting broccoli is out then you can of course use the classic. I love a bit of sweetness in this too so pomegranate works really well but you could use any fresh or dried fruit you like… if you like! Get the recipe.

The Big Chickpea Chopped Salad
This big chickpea chopped salad is the easy breezy satisfying summer crowd pleaser you all need. (Not to eat with a crowd, you know what I mean. Everyone likes it!)
My friend Dan told me that tonnes and tonnes of tomatoes, cucumber and asparagus are going to waste at the moment (because of school and restaurant closures etc) so I’m cooking and eating as many as possible and they’re my hero summer inspiration. Use whatever you’ve got that needs some love for this satisfying salad! If you don’t have chickpeas you can use any beans.

Quinoa, Feta & Broccoli Salad
This Big Broccoli, Quinoa & Feta Salad with quick pickled pink onions is ideal year round. You can roast the broccoli for extra warmth when it’s a little colder out or swap for cauliflower or whatever veg you have at home. I like this best when it’s just cooked as a warm salad but it’s great cold too. I had quinoa to hand but you could also swap for buckwheat, lentils or chickpeas, plus use any cheese that takes your fancy too.

Sesame, Ginger Lime Noodle Salad
These Sesame, Ginger & Lime Noodles hit the spot for a quick & easy lunch or dinner. If you make for dinner, the leftovers are wonderful for tomorrow’s lunch too! I made it with what I had at home this time; asparagus, frozen peas, limp cavolo nero & celery but it’s lovely with all veg, so use what you’ve got. Sometimes I keep the greens raw when they’re super fresh & when the sun’s out.
