‘Community’ Cookbook Masala Chai

This magnificent Masala Chai is the perfect cuppa for warming up and getting cosy with your loved ones. The recipe for this special tea is by Sanna Mirza, from the incredible women of The Hubb Community Kitchen and their cookbook “Together”.

Through these recipes, the women, who lived in Grenfell Tower, are raising money to keep their shared kitchen thriving so they can make meals for their families and neighbours and their wider community every day of the week.

Method

  1. Peel and finely chop the ginger and slightly crush the cardamom pods under the blade of a knife.
  2. Put the water, milk, ginger and spices in a pan. Bring to the boil, reduce the heat and simmer for 10 minutes, stirring to prevent the milk from boiling.
  3. Add the leaves, stir and simmer for another 5 minutes and add the sweetener to taste.
  4. Strain into mugs or heatproof glasses and serve.

Ingredients

2cm fresh root ginger
6 cardamom pods
700ml water
300ml any milk you like
1 cinnamon stick
1/4 tsp crushed black pepper
2 tbsp loose black tea leaves
1-2 tbsp sweetener of choice
