Lavender, Sumac & Pomegranate Cup

Drinks and Cocktails

Lavender, Sumac & Pomegranate Cup

This Sumac & Pomegranate Cup was a recipe I made for The Bake for Syria fundraiser on Columbia Road and went down such a treat with everyone! Refreshingly simple, it’s the perfect Summer sipper without the extra sugar. Sumac is really easy to buy in every shop and is delicious in sweet and savoury recipes with a lovely lemony flavour so feel free to replace with citrus zest. Lavender is really easy to grow and not only does it make your garden look beautiful, it also looks lovely in baking and drinks.

If you want to make a big jug, double up the recipe and keep in the fridge.

I served it with a dash of Seedlip (non alcoholic spirit) but it works great on it’s own (just add a little extra sparkling water).

*To turn into a cocktail top add a splash of gin, vodka or prosecco.*

  1. In a large glass, combine the pomegranate juice, maple syrup and seedlip and stir.
  2. Fill 2 glasses with lots of ice and add your mix along with sparkling water, fresh pomegranate and top with a sprinkling of sumac and a sprig of lavender.

  • 1 tbsp fresh pomegranate juice
  • fresh pomegranate seeds
  • 400ml sparkling water
  • 100ml seedlip
  • 1 tsp maple syrup
  • sprinkle of sumac
  • Sprig fresh lavender (to garnish)
