Lentil Salad with Sumac Dressing





This lentil salad with a delicious sumac dressing is a winner with everyone! If you haven’t been swayed with lentils just yet, maybe you will after this. A great hearty salad for a sunny weekend and great to take on a picnic too. Keep your eyes out for unpacked lentils at a refill shop near you; shout out to my locals @restore.refill @bulkmarketuk. 1. In a pan of boiling water, simmer the lentils (rinsed well and drained, soaked if time) until tender, about 20 mins, check the label instructions.

2. Meanwhile shake the dressing ingredients together and season to taste.

3. Chop the herbs, tomatoes, cucumber, pepper and spring onions and mix together in a medium bowl /serving platter.

4. Add the lentils, toss everything together and serve warm or once cooled.


300g uncooked brown/puy lentils
300g cherry tomatoes, halved or 4 medium ripe tomatoes, diced
1 medium cucumber, diced
1 large red pepper, diced
bunch spring onions / small onion, sliced
small handful fresh mint, finely chopped
small handful fresh dill, finely chopped
1 garlic clove, finely chopped
5 tbsp extra virgin oil
Juice and zest of 1 lemon
2 tsp maple syrup or raw honey
2 tsp sumac
pinch of (aleppo) chilli flakes
sea salt & pepper
