Sesame Lime Chopped Salad





This easy zesty sesame lime chopped salad is perfect as a Summer BBQ side or even on it’s own and great for packed lunch too! The recipe will make loads so enjoy it today then pack it up for your work lunch tomorrow. Use any crunchy veg you’ve got and top with toasted nuts or seeds, serve warm or cold.


  1. Cook the quinoa according to packet instructions with a pinch of sea salt (takes about 15 mins). Meanwhile whisk or blend the dressing ingredients together in a large bowl.
  2. Finely chop all the veg and add to the bowl.
  3. Put the frozen peas / corn in a bowl and pour a little boiling water over them to defrost and then drain.
  4. Mix everything together, taste for seasoning and top with the toasted nuts.


  • 500g quinoa (cook according to packet)

  • 1/2 small red cabbage, finely diced

  • 2 large carrots, finely diced

  • 1 medium cucumber, finely diced

  • 5 spring onions or 1 medium red onion, finely diced

  • 2 large handfuls frozen peas, sweetcorn or edamame

  • 3 large handfuls fresh coriander, mint, basil, or a mix

  • 1 large handful cashews or peanuts, toasted & roughly chopped


  • 6 tbsp extra virgin olive oil

  • 2 tsp toasted sesame oil

  • 1 tsp chili flakes or chopped fresh chili, to taste

  • 2 fat garlic cloves, finely chopped

  • Juice & zest of 3 limes

  • 3 tbsps tamari or soy sauce, to taste

  • 1.5 tbsps maple syrup or raw honey

  • Sea salt & pepper
