Sticky Spicy Salty Sweet Nuts
These deliciously moreish *sticky spicy salty sweet nuts* were created as a super snack for my good friend Gary Barlow, to celebrate his triumphant “Night at The Museum Show”. We had a blast cooking together on Zoom making these and it was a real pleasure to be in charge of snacks. These take no time at all so easily satisfy and make them with whatever nuts and seeds you have at home; anything goes! You can do these on the hob or spread over a large baking tray and pop in the oven at 180c.
Store any leftovers in a jar with tight fitting lid. Sprinkle on soups or salads. Makes a great present too!

Let 2 tbsp of oil or butter melt in a large frying pan while you mix everything else – but the maple syrup- in a bowl.
On a low to medium heat, let everything fry nicely and gently, taking care not to burn, it will smell incredible!
Stir every now and then to make sure everything is coated and toasting and then drizzle in the maple syrup, stir and let cook for another 45 seconds and then tip everything back into the bowl.
Let cool for at least 5 minutes before eating, they will crisp up as they cook, add another sprinkle of salt if you like.
1 tbsp garam masala or curry powder
Sprinkle of cayenne or chilli powder (optional)
2 handfuls mixed nuts – whatever you’ve got
1 handful seeds eg pumpkin seeds or pistachios and some nigella seeds
2 sprigs of rosemary or thyme or 1 tsp dried herbs
2 tbsp maple syrup or honey
sea salt & pepper
