Wild Garlic Frittata
A quick one pan breakfast is one of my favourite ways to start the day and use up whatever leftovers I have in the fridge. I absolutely love cooking seasonally and this wild garlic made such a great addition to my recipes! Use whatever cheese you have and feel free to add any other veg you have that needs using up.
- Preheat your oven to 220c. Add a knob of butter to pan and cook the onions for about 5 mins until soft. Meanwhile whisk your eggs in a large bowl with the salt and pepper and half the cheddar.
- Once your onions are soft, add the wild garlic to the pan followed by the egg mix and then frozen peas.Give it a little stir if the frozen peas are clumpy.
- Top with the remaining cheese and pop in the oven for 20 mins until golden and cooked through.
