Wild Garlic Frittata

A quick one pan breakfast is one of my favourite ways to start the day and use up whatever leftovers I have in the fridge. I absolutely love cooking seasonally and this wild garlic made such a great addition to my recipes! Use whatever cheese you have and feel free to add any other veg you have that needs using up.

Method

  1. Preheat your oven to 220c. Add a knob of butter to pan and cook the onions for about 5 mins until soft. Meanwhile whisk your eggs in a large bowl with the salt and pepper and half the cheddar.
  2. Once your onions are soft, add the wild garlic to the pan followed by the egg mix and then frozen peas.Give it a little stir if the frozen peas are clumpy.
  3. Top with the remaining cheese and pop in the oven for 20 mins until golden and cooked through.

Ingredients

  • 8 eggs
  • 2 large handfuls frozen peas
  • 1 large handful wild garlic
  • 2 red onions, sliced
  • 40g cheddar cheese, grated
  • Sea salt and pepper
  • Knob of butter
