Zero waste Cauliflower Soup with fried Cauliflower Leaves





This zero waste Cauliflower soup uses all the bits you might throw away with fried cauliflower leaves giving a lovely crunch. The whole cauli is used in all it’s glory and goes in along with turmeric, ginger & some beans to make a creamy hearty base. Perfect more making a big batch and freezing for a rainy day.


1. Chop off the leaves. I roughly chop the big ones and keep the small ones whole. Fry them in a bit of the oil until golden then season and set aside.
2. In the same pan, fry the onions in the rest of the oil for 8 minutes while you get on with chopping everything else.
3. Add the garlic, ginger & chilli for a few minutes until softened.
4. Add the turmeric, cauliflower florets, the chopped stalk and the stock, lid on, bring to the boil, add the beans then turn down immediately to a medium simmer and let cook for about 8 minutes until the cauliflower is tender.
5. Blend up the soup in batches, seasoning to taste and adding lemon juice,  then serve up each bowl and top with the cauliflower leaves, coriander leaves, lemon zest then drizzle over the olive oil


1 large cauliflower, 1kg including leaves
1.5 tbsp coconut oil or butter
1 large onion, roughly chopped
1 tsp ground turmeric
1.5 litre veg stock / chicken broth
3 cloves garlic, diced
1 small thumb fresh ginger, diced
1 x 400g tin of white beans, drained weight 280g
Juice of 1 lemon or lime
Sea salt & black pepper to taste
Chilli flakes or fresh chopped chilli
To serve
Big handful coriander, stems and leaves
Lemon zest of the lemon from above
Drizzle of extra virgin olive oil.
