Summer BBQ recipe round up

Bust out the BBQ and get grilling with these easy, crowd-pleasing recipes. From exciting veg dishes to my Mum’s Filipino chicken, there’s something for everyone here. I’ve also included some of my favourite side dishes. Happy barbecuing!

1. Griddled peaches with halloumi & mint
This is such a simple dish but I have no doubt it will be everyone’s favourite part of your BBQ. If your peaches aren’t as ripe as you might like, drizzle over a little honey just before serving - it works really well with the salty halloumi.

2. Griddled courgettes with feta, olives & mint
Griddling courgette strips on the BBQ gives them a lovely smokey flavour which I love with feta and mint.

3. Cuban-style limey corn on the cob
I first had this Cuban-style limey corn on the cob almost 15 years ago at Cafe Habana in NYC and the delicious flavours have stayed with me ever since. They’re great alongside other BBQ dishes and really fun to play around with. If you don’t have a lime, swap for lemon or swap parmesan for crumbled feta. If you want to make it vegan, the combination of chili oil and lime is amazing.

4. Mum’s Filipino chicken with mango-tomato salsa
My Mum is from Manila in the Philippines and this chicken dish is an ode to her. I recommend making extras for shredding into salads or cold noodles later in the week. Get the recipe on page 179 in Feel Good and watch me making the salsa here.

5. Veg kebabs Filipino-style
As with the chicken above, my Filipino mum inspired this dish. It works really well with the mango and tomato salsa so why not make the chicken for those that enjoy meat, these kebabs for veggies and the salsa for everyone! Recipe on page 157 in Feel Good.

6. Charred corn & avocado salad

One of my favourite barbecue sides, this always goes down a storm. Recipe on page 100 in Feel Good.

7.  5 minute courgette salad
This is so quick and easy to make I can guarantee you’ll be making it all summer long.

8. Freestyle cupboard tabbouleh

A big, colourful grain-based salad is the perfect addition to a BBQ spread as it can be made in advance (it’s flavour will develop as it sits in the fridge) and doesn’t wilt if left out in the sunshine.
