Summer sweets

Here’s a round up of my favourite summer sweet treats, including a simple watermelon & lime refresher, easy mango lassi lollies, frozen chocolate banana bites and lots more. Most of the recipes can be made in advance and stored in the freezer or a cake tin to have on standby for when you fancy something sweet!

Mango & lime lassi lollies
These take only 5 minutes hands on time (the freezer does the rest of the work) and only use 5 ingredients making them a super simple summer treat.

Frozen chocolate banana bites

These go down especially well with kids. You can swap peanut butter for your favourite nut butter or tahini for a nut free version.

Frozen yoghurt bark
You can top this yoghurt bark with whatever you fancy. I usually either go down the berry route, with whatever seasonal berries look best at the shops, or the tropical route, with lots of lime zest and coconut. The key is pumping up the flavour of the yoghurt base with vanilla, citrus juice and a dash of honey or maple.

Strawberry muffins

Strawberry breakfast muffins to grab and go, spiced with a touch of cardamom. If you love ‘baked oats’ you’ll love these. The recipe makes 6 muffins but I often double the recipe on busy weeks when I want to have treats ready to go.

Frozen chocolate banana lollies

Which toppings are you going for?! Here with freeze dried raspberries, also great w chopped pistachios, roasted peanuts, hazelnuts, coconut... the lolly list goes on. Enjoy!

Watermelon with lime & aleppo pepper

This isn’t a recipe as such, more of a suggestion. Cut your watermelon into chunks, squeeze over lots of lime juice and scatter with aleppo pepper and flaky salt. A very speedy, very juicy, very delicious snack.

A refreshing summer drink that hits the spot as an afternoon pick me up or as an easy drink to make for a crowd when you’re hosting.

Blueberry and banana cake

I’ve combined two favourites here - banana bread and blueberry muffins. It would also be glorious with raspberries or any other seasonal berries you can get hold of.
