Soup season!
It’s officially soup season so here’s a round up of my favourite recipes to keep you cosy. Soups freeze well so make a big batch and stash away a container or two to pull out on busy days.
Roasted red pepper & squash soup
With smooth soups like this, toppings are especially important for texture. I love halloumi “croutons” or garlicky bread croutons here.
Potato, leek & turmeric soup
This is everything I want in the colder months: hearty veg, spice and lots of broth. If you prefer things thicker and smooth, blitz up some or all of the soup.
Red lentil, quinoa & kale soup
This was created with love from a “use up what’s left in my cupboards” situation… and I find those are nearly always the most satisfying recipes.
Spiced parsnip soup with fried chickpeas
Fried chickpeas & spiced silky soup. I love this with carrots, parsnips, squash, sweet potato… odds and ends of root veg are perfect for this.
Lemony lentil soup
Lemony lentil soup, inspired by the Turkish red lentil soup - mercimek corbasi. This soup strikes the perfect balance between warming and bright, with lots of lovely freshness from the lemon. You can either blitz the soup for a silky smooth finish or leave it chunky, or blitz half and leave half chunky. Whatever you fancy!
Winter minestrone
I love minestrone all year round and this is my winter version, using hearty squash and white beans.
Broccoli & cheddar soup
A midweek wonder that I like to serve with crusty bread or toast for dunking.
