20 MINUTES HANDS ON, 1.5HRS FREEZING | MAKES 16 BITES

Frozen chocolate banana bites

Swap nut butter for tahini plus honey if you’d like a nut free version.

METHOD

  1. Line a baking tray or a large plate with parchment paper. Choose one that can fit in your freezer.

  2. Slice your bananas into just over 1/2cm thick slices.

  3. Use a teaspoon and your fingers to press a little of your nut butter onto half of the banana bites. And then press the other half on top to make “sandwiches”. As they’re ready, pop them into on the lined tray/plate and transfer it to the freezer for 20 mins.

  4. Meanwhile, melt the chocolate in a Bain Marie (heatproof bowl set over a pan of gently simmering water but don’t let the bottom of the bowl touch the water).

  5. Bring your tray out, use 2 forks to dip each sandwich (they’ll just be semi frozen at this point, don’t worry, you’re freezing them more) into the melted chocolate and let any excess chocolate drip off back into the bowl- work fast as the chocolate will harden very quickly. - I like to half dip these but you could dip them fully, in which case melt a bit more chocolate.

  6. Pop them back on the tray and straight into the freezer for 1 hour to freeze completely. Sprinkle a tiny bit of sea salt onto the top of each one.

  7. When you want to eat them, bring them out of the freezer and let them sit for 10 minutes to soften slightly before you tuck in but don’t leave them out too long on a hot day.

    Tip - once they are fully set, you can save space in the freezer by taking them off the tray and popping them straight into a sealed container and keep them in the freezer. Enjoy!

2 large ripe bananas, peeled
4-5 tbsp of your fave nut butter
50g chocolate, roughly broken into squares
Sea salt, to sprinkle at the end
