Frozen chocolate banana lollies
Which toppings are you going for?! Here with freeze dried raspberries, also great w chopped pistachios, roasted peanuts, hazelnuts, coconut... the lolly list goes on. Enjoy!
TIP - it’s likely you might have a bit of melted choc left, well obviously you can lick the bowl clean but if not, spread it on the baking paper in the corner & when hardened, give it a rough chop or snap & add it to other puddings or icecream or Fro yo
METHOD
Line a big plate or a small baking tray (that can fit in your freezer). Slice the peeled bananas in half then insert your sticks & freeze for about 2 hours.
When bananas have 15 mins left freezing time, prepare toppings then make a Bain marie by half filling a medium pan w boiling water then placing a heatproof bowl to sit in the pan without touching the water.
Melt the coconut oil & chop chocolate, add to oil & gently melt, stirring from time to time then take off the heat.
Hold 1 banana over the chocolate & using a spoon drizzle it over most of the banana. Alternatively transfer the melted choc to a jar (heatproof) & then dip the banana in and out, easy & less messy! Pop back on the tray, scatter over your toppings, be sure to do this straight away as the choc will harden immediately & you want toppings to stick so best to do 1 by 1
Pop back in freezer for 1 hour ( you can eat them after 20 mins but 1 hour lets them fully harden) Recommend waiting 5-10 mins before eating out the freezer 🌞

2 medium ripe but firm bananas
80g fave chocolate
2 tsp coconut oil
Tiny pinch sea salt
+ Options for sprinkling:
Chopped nuts, my faves are hazelnuts and pistachios
Flaked almonds or granola
Seeds like black & white sesame
Swirl of smooth nut butter
Drizzle of tahini and honey
Dessicated coconut
Choc chips or sprinkles
Freeze dried raspberries
