Fruit platter with yoghurt and toasted coconut

In the summer this is as much effort as I can be bothered to make for pudding! Lots of juicy fruit, thick creamy yoghurt and toasted coconut.

METHOD

In a frying pan, toast the dessicated coconut for a few minutes, stirring constantly, until golden then leave to cool for a few minutes.

Meanwhile, arrange the fruit on a large platter. Put the yoghurt in a shallow bowl and top with the cooled desiccated coconut. Let everyone dig into the fruit with dollops of yoghurt.



INGREDIENTS

1 melon, cut into wedges

2 passion fruits, halved

1 pomegranate, cut into wedges

1 large orange, cut into wedges or slices

2 kiwis, cut into wedges or halves

200g thick greek yoghurt

2 tbsp desiccated coconut
