Griddled peaches with halloumi & mint

This is such a simple dish but I have no doubt it will be everyone’s favourite part of a summer BBQ. You can make this with a hot griddle pan if you prefer.

METHOD

  1. Preheat the BBQ to it’s highest heat.

  2. Toss the peach quarters and halloumi chunks with olive oil and thread onto skewers. Griddle for about 5 minutes, turning halfway until the peach is softened but retains its shape and the halloumi is golden. Exact timings will depend on the heat of your BBQ so keep an eye. If you don’t have skewers, you can put the chunks directly on the grates and turn once they release easily. Just make sure you don’t cut the peach and halloumi too small so that they fall through the grates.

  3. Squeeze over the lemon juice and scatter over the mint then serve straight away.

INGREDIENTS

4 peaches, de-stoned and cut into chunks

250g halloumi, cut into chunks

Juice of 1/2 lemon

2 tbsp extra virgin olive oil

Handful of mint leaves
