Grilled courgettes with feta & orange

This is a lovely way to use a glut of courgettes. You can swap the orange slices for lemon zest if you prefer.

METHOD

  1. Toast the almonds in a small saucepan then roughly chop. Remove the orange peel then cut into segments.

  2. Turn your oven grill onto its highest setting. Cut the courgettes into approx 1.5cm rounds. Toss with the olive oil and a pinch of salt, spread out on your largest tray. Grill for approx 3-5 minutes on each side until deeply golden - keep an eye on them, especially if you know your grill is fierce!

  3. Pile the courgettes onto a large plate, crumble over the feta and top with the orange segments and chopped nuts. Shred or tear the mint and scatter over.

INGREDIENTS

4 small or 2 medium courgettes
2 tbsp ghee or olive oil
20g almonds
50g feta
1 orange
Small handful mint
Sea salt & pepper, to taste
