Griddled lettuce with green goddess dressing
If you haven’t tried grilling lettuce before, this is your sign to give it a try!
METHOD
For the dressing, simply put all the ingredients in a blender until smooth then season to taste.
Drizzle 2 tbsp olive oil over the cut sides of the lettuce then lay cut side down on the grill. Cook for about 5 minutes until nicely charred on the under side then transfer to a large serving platter and season with salt and pepper. Drizzle over about 1/3 of the dressing, top with the cucumber followed by another drizzle of dressing. Scatter over the seeds and finish with a final drizzle of extra virgin olive oil.
INGREDIENTS
Large handful of toasted seeds
4 heads of gem lettuce, halved through the root (or quartered if large)
2 tbsp olive oil
½ cucumber, roughly chopped
For the dressing:
Bunch of mint, leaves picked (use the stems for mint tea)
Bunch of parsley or coriander
Bunch of chives
150g yoghurt
Zest and juice of a lemon
2 tbsp capers
2 tbsp extra virgin olive oil, plus extra for drizzling
Sea salt and pepper
