Lunchbox lentil salad
This is perfect for packing up in a lunchbox to take with you to work or to the park.
METHOD
1. In a pan of salted boiling water, simmer the lentils until tender. This usually takes about 20-25 minutes, check the pack for instructions.
2. Meanwhile, shake the dressing ingredients together and season to taste .
3. Chop the tomatoes, cucumber, pepper and spring onions and mix together in a medium bowl /serving platter. .
4. Add the lentils and herbs, toss everything together and serve warm or once cooled.
INGREDIENTS
300g uncooked brown/puy lentils, rinsed and drained
300g cherry tomatoes, halved or 4 medium ripe tomatoes, diced
1 medium cucumber, diced
1 large red pepper, diced
Small bunch spring onions / small onion, sliced
2 handfuls of fresh herbs (eg basil, dill, mint, parsley)
Salt and pepper
For the dressing:
1 garlic clove, finely chopped
5 tbsp extra virgin oil
Juice and zest of 1 lemon
2 tsp maple syrup or honey
2 tsp sumac
Pinch of (aleppo) chilli flakes
Optional topping: crumbled feta
