Mango lassi lollies

These take only 5 minutes hands on time and use only 5 ingredients, making them a super simple treat for when the mercury is rising!

METHOD

In a food processor or blender, blitz all of the ingredients until smooth. Taste and adjust as needed with more a little more lime juice or a dash of sweetener if your mango isn’t very ripe and sweet. Pour into lollie moulds and freeze for 3 hours until set.

INGREDIENTS

2 ripe mangoes, peeled, de-stoned and cut into rough chunks

Juice of 2 limes, zest of 1 

250g thick Greek yoghurt

6 cardamom pods, seeds removed and ground

Little pinch of sea salt

A dash of honey or maple if your mango isn’t as ripe and sweet as you would like
