One pot orzo with gremolata

This is a great one pot, speedy dinner for busy days.

METHOD

Heat the olive oil in a large pan, once hot add the onion, salt and pepper and fry for 10-12 minutes until soft and golden. Add the garlic and chilli flakes, fry for a couple of minutes until fragrant. Add the orzo and fry for a couple of minutes, stirring to coat the pasta with the onion mix. 

Add the tomatoes, stock and chickpeas and bring to the boil. Cover and reduce to a simmer for 7-10 minutes until the pasta is al dente (if the pasta isn’t quite cooked but it’s beginning to look a little dry, add a splash of water). Give it a stir every so often to be sure it isn’t sticking to the bottom of the pan.

Meanwhile, make the gremolata by mixing the ingredients in a bowl and seasoning to taste with salt and pepper. Check the orzo for seasoning then serve straight from the pan with the gremolata for topping.


INGREDIENTS

For the orzo:

3 tbsp olive oil

1 onion, finely chopped

3 garlic cloves, finely chopped

Pinch of chilli flakes

350g orzo

1 tin of chopped tomatoes

700ml veg stock

1 tin of chickpeas or white beans, drained and rinsed

Sea salt and pepper


For the gremolata:

Large bunch of parsley, finely chopped

1 garlic clove, finely chopped

Zest of 1 lemon, finely grated

2 tbsp extra virgin olive oil
