Parmesan crisps

These are one of my favourite toppings for silky smooth soups. They also work well in winter salads.

METHOD

Preheat the oven to 180°C and line a baking tray with parchment paper.

Put 6 small clusters of parmesan on the lined baking tray, leaving room between each one to allow for spreading. Top the clusters with chilli flakes, herbs or sesame seeds.

Bake for 7-9 minutes until melted and golden, keep an eye on them.

They will be soft when they first come out of the oven; allow to cool on a wire rack for a few minutes and they’ll crisp up. Serve with your favourite soup!


INGREDIENTS

60g parmesan, coarsely grated

Options for sprinkling:

Pinch of chilli flakes

Pinch of thyme, rosemary or sage

Pinch of black sesame seeds
