Melon, black olive and feta salad

A juicy, fresh, no-cook salad for hot days.

METHOD

Put the melon on a large serving platter. Top with the salad leaves, black olives, pomegranate seeds, feta, a squeeze of lemon juice and a good drizzle of extra virgin olive oil.



INGREDIENTS

1 small melon or half a large melon, peeled and roughly cut into chunks

2 handfuls of salad leaves

2 handfuls of black olives

2 handfuls of pomegranate seeds

100g feta, crumbled

Juice of half a lemon

Extra virgin olive oil for drizzling
