Fast and fresh feta salad
Simple, speedy and perfect for hot sunny days.
METHOD
Put the onion, vinegar and salt in a small bowl and scrunch with your fingers to soften the onion. Set aside to quick-pickle for 5/10 minutes as you chop the veg.
Put the cucumber, radishes and feta on a large serving plate. Add the onions, which should softened and pink from their quick-pickle. Top with the crumbled feta, za’atar and a drizzle of extra virgin olive oil.
INGREDIENTS
1 cucumber, peeled into ribbons
Handful of radishes, sliced or chopped
1 small red onion, thinly sliced
3 tbsp apple cider vinegar
100g feta, crumbled
1 tsp za’atar
Extra virgin olive oil for drizzling
